What exactly is Mevushal Wine...?

Mevushal, a Hebrew term meaning “cooked,” refers to wine that has undergone a boiling process. Once wine has been cooked in this manner and made kosher, it retains its kosher status even when handled by non-Jewish individuals. Therefore, it becomes essential to label all wine served to or by non-Jews in a kosher environment as “mevushal.”

In Jewish culture, wine holds significant symbolism, representing the holiness and distinctiveness of the Jewish people. It is utilized for sanctifying Shabbat and Yom Tov, as well as during Jewish celebrations (simchot). In ancient times, wine was poured upon the altar alongside sacrifices in the Beit Hamikdash (Holy Temple).

Due to its historical association with idolatrous practices, wine holds a unique status in Jewish law, subjecting it to additional restrictions during its production and handling, even for non-ceremonial purposes.

According to Jewish law, the entire process of producing and handling kosher wine must be exclusively carried out by Jews. This includes wine, grape juice, and all products containing them, which must remain in Jewish possession from manufacturing to consumption. After a bottle is opened, it is forbidden for any wine, grape juice, or beverages containing them to be touched by a non-Jew.

To enable non-Orthodox Jews and gentiles to handle and serve wine without violating kosher laws, the mevushal process was developed in Israel. This process involves flash pasteurization, where the wine is rapidly heated to a high temperature and then quickly cooled down.

Rav Shlomo Zalman Auerbach zt”l recommended that the ideal temperature for mevushal wine be 195°F. However, some argue that heating the wine to 175°F is more delicate. Nevertheless, Orthodox Judaism commonly accepts pasteurized wine as mevushal, although there are varying interpretations and stricter rules. It is essential to consider the historical sources and traditions while interpreting these guidelines.
